One of my daughters turned up on my doorstep this morning asking a favor. Ingredients in hand, “Could I make her a batch of Double Chocolate Muffins to take on a long weekend trip. A test, I think of, my commitment for this year to have more time for those I love, and writing.
Big kids request them.
Grandkids scoff them wanting more.
Visitors seek them out in cupboards.
And a spoilt little doggie begs and scavenges like crazy.
1 and a 1/4 cups flour, 1 cup sugar, (some brown is nice), 1 teaspoon baking soda, 1/4 cup of cocoa powder, put all through a sieve into a large bowl and make a well in the middle.
Mix the wets together in a separate bowl, 1 cup plain yoghurt, 1/2 cup of milk, 100g of melted butter and some vanilla essence.
Combine all together, mixture should end up thick and wet, not too dry, and add 1/2 cup of chocolate chips or buttons.
Spoon into muffin pans, makes 12 big ones, and decorate tops with a few more chips or buttons.
Bake for 15 – 20 minutes hot oven maybe 200 f, put knife in, if it comes out dry they are ready.
Dust tops with a sprinkle of icing sugar through the sieve.
Can be eaten for a puddy with fruit, whipped cream, or ice cream or go really mad and have all of them LOL.
